Product Ventures’ knife design for Eleven Madison Park’s chef Daniel Humm and Victorinox was recently featured in New York Magazine’s restaurant scene blog.
Chef Daniel Humm collaborated with Victorinox for his own knives, which will run you $350 for a set of four. At Eleven Madison Park, the high-carbon stainless-steel blades are used to help slice through the restaurant’s signature roasted duck. “The most important characteristic is functionality,” says Humm. “The knife needs to be sharp with an edge that will last awhile.”
